This gluten-free meatball recipe is for my meat lovers looking for a gluten, dairy and egg free way to add protein to their favorite meal. Put them on your go-to noodles and you’ve got yourself a yummy meal.
TIPS FOR MAKING THESE
- Look for ground meat that’s organic. If you can shop at a small, local butcher and have them ground the meat fresh for you, even better.
- Boost the vitamin K power by adding in some chopped parsley. Vitamin K helps reduce estrogen dominance which is a really big contributor to Hashimoto’s Disease.

WHAT YOU’LL NEED
* 2 tbsp. of olive oil
* 1 small onion finely chopped
* 2 garlic cloves minced
* 1 pound ground chicken thighs
* 1 pound ground chicken breasts
* 3/4 cups cooked potatoes, mashed
* 1 tsp. of Italian season
* 1 tsp. of salt
* 1/4 tsp. of pepper
* 1/2 tsp. of garlic powder
HOW TO MAKE IT
- Place all of the ingredients in a large bowl and use your hands to mix it all together.
- Pour the olive oil in a large skillet. Preheat the oven to 375 degrees.
- Form the meat mixture into meatballs and place them in the skillet with the olive oil. Cook over medium heat, turning so that they are browned on all sides.
- Once the meatballs are browned, transfer them to a ceramic baking dish.
- Add 1/2 cup water, and bake at 375 degrees until they are cooked through – about 15-20 minutes.
